Founded in 2007, Ormiale is situated in the north of the Entre-deux-Mers region, 15 Kilometers south of St. Emilion and 8km from Castillon la Bataille.
The 2 hectares on the Côtes de Castillon and Côtes de Francs are Demeter certified bio-dynamically grown vines, which consist of Merlot, Cabernet Sauvignon, Cabernet Franc and Petit Verdot. The main wine "Ormiale" is vinified and bottled on the property as an appellation Bordeaux contrôlée.
The harvests are handpicked and completely hand de-stemmed since 2010 and loaded into conical french-oak vats and stainless steel vats. In here, the fruit is left to ferment un-sulphited and the fermentation is assisted with natural yeast. Vinification takes 4-5 weeks depending on the vintage.
The duration of the maturation of the wines is +/- 18 months. The natural wines of Ormiale are unfiltered and there is no use of albumen. Sulphites are only occasionally used when necessary, before bottling.
